Thai red tofu curry
Crispy tofu in red curry with peppers and coconut milk, served with rice.

Ingredients
For 1 serving.
- 200 g firm tofu
- 1 red pepper
- 70 g jasmine rice (dry)
- 2 tbsp red curry paste, 150 ml light coconut milk
Instructions

Cook the jasmine rice in plenty of salted water for 12 minutes; drain.

Pat the tofu dry and cube. Pan-fry in a little oil until golden on all sides, about 5 minutes.

Add the red curry paste to the pan and cook 1 minute to bloom.

Pour in the coconut milk and add the sliced pepper. Simmer 5 minutes.

Serve the curry over rice with coriander and lime.
