Lean beef & sweet-potato mash

Seared sirloin over sweet-potato mash with green beans and pepper sauce.

Ingredients

For 1 serving.

  • 150 g sirloin
  • 200 g sweet potato
  • 120 g green beans
  • Pepper sauce

Instructions

    Peel and cube the sweet potato. Boil in salted water for 15 minutes until fork-tender; drain and mash.

    Boil or steam the green beans for 4 minutes.

    Season the sirloin with salt and pepper. Pan-fry in a hot skillet 3 minutes per side for medium-rare.

    Rest the steak for 3 minutes on a warm plate.

    Serve the steak sliced, over the mash, with the green beans and pepper sauce.
