Roast chicken breast with roasted potatoes, carrots and thyme.

- 180 g chicken breast
- 200 g potatoes
- 120 g carrots
- Olive oil, thyme
Instructions

Preheat oven to 200°C.

Cut the potatoes and carrots into bite-sized pieces. Toss with olive oil, salt, pepper and thyme.

Roast on a tray for 15 minutes.

Add the seasoned chicken breast to the tray and roast for another 20 minutes until the chicken is cooked through (74°C internal).

Rest the chicken for 3 minutes, slice, and serve with the vegetables.
