Baked cod with lentils
Lemon-baked cod on Puy lentils with spinach and a drizzle of olive oil.

For 1 serving.
- 180 g cod fillet
- 90 g Puy lentils (dry)
- 100 g spinach
- Olive oil, lemon
Instructions

Rinse the Puy lentils and cook in salted water for 20 minutes until tender; drain.

Preheat oven to 200°C. Place the cod on a tray, drizzle with olive oil and lemon, and season.

Bake the cod for 10–12 minutes until opaque and flaky.

Wilt the spinach briefly in a hot pan with a splash of water.

Stir the spinach into the lentils, drizzle with olive oil, top with the cod and lemon wedges.
