Salmon traybake

Salmon, new potatoes and asparagus roasted on one tray with lemon.

Ingredients

For 1 serving.

  • 150 g salmon
  • 200 g new potatoes
  • 120 g asparagus
  • Olive oil, lemon

Instructions

    Preheat oven to 200°C. Halve the new potatoes.

    Toss potatoes with olive oil, salt and pepper. Roast 20 minutes.

    Add the salmon and asparagus to the tray. Drizzle with lemon juice and more olive oil.

  4. 4

    Return to the oven for 10–12 minutes until the salmon flakes easily.

  5. 5

    Squeeze extra lemon over the top and serve.
