Ingredients
For 1 serving.
- 3 eggs
- Handful spinach
- 5 cherry tomatoes
- 40 g feta
- Olive oil, salt, pepper
Instructions

Whisk the eggs in a bowl with a pinch of salt.

Warm the olive oil in a non-stick pan. Add the cherry tomatoes and cook 1 minute until just softened.

Add the spinach and stir until wilted.

Pour in the eggs and stir gently until just set.

Crumble the feta over the top and finish with black pepper.
