Poached egg & avocado sourdough

Two poached eggs on sourdough with smashed avocado and chilli flakes.

Ingredients

For 1 serving.

  • 2 large eggs
  • 1 slice sourdough (70 g)
  • ½ avocado
  • Lemon, chilli, salt

Instructions

    Bring a small pan of water to a gentle simmer and add a splash of vinegar.

    Crack each egg into a cup, then slide into the simmering water. Poach for 3 minutes.

    Meanwhile, toast the sourdough until deep golden.

    Mash the avocado with lemon juice, salt and chilli flakes.

  5. 5

    Spread the avocado on the toast, top with the poached eggs, and finish with more chilli and black pepper.
