Hummus & egg pita

Ingredients

For 1 serving.

  • 1 wholemeal pita
  • 3 tbsp hummus
  • 2 boiled eggs
  • Rocket, olive oil

Instructions

  1. 1

    Boil the eggs for 8 minutes, then cool, peel and slice.

    Warm the pita in a toaster or dry pan for 1 minute per side.

  3. 3

    Split the pita open carefully.

  4. 4

    Spread the inside with hummus, then fill with rocket and egg slices.

  5. 5

    Drizzle with olive oil and a pinch of sea salt.
