Coconut chia pudding

Chia seeds set overnight in coconut milk with cocoa and raspberries.

Ingredients

For 1 serving.

  • 30 g chia seeds
  • 200 ml light coconut milk
  • 1 tsp cocoa
  • 60 g raspberries

Instructions

    Whisk the chia seeds, coconut milk and cocoa together in a jar.

    Let stand for 5 minutes, then whisk again to break up any clumps.

    Cover and refrigerate for at least 2 hours, ideally overnight.

    Top with the raspberries just before serving.

  5. 5

    Keeps in the fridge for up to 3 days.
