For 1 serving.

- 2 slices sourdough
- ½ avocado
- 60 g halloumi
- Mushrooms, olive oil
Instructions

Slice the halloumi and pan-fry 1 minute per side until golden; set aside.

In the same pan, cook the sliced mushrooms 3 minutes; set aside.

Toast the sourdough slices.

Fry or scramble the eggs to your liking.

Plate the toast, top with eggs, halloumi, mushrooms and sliced avocado. Finish with olive oil and salt.
