Salmon & cauliflower rice

Seared salmon over cauliflower rice with lemon butter and asparagus.

Ingredients

For 1 serving.

  • 140 g salmon fillet
  • 150 g cauliflower rice
  • 100 g asparagus
  • Butter, lemon

Instructions

    Season the salmon with salt and pepper.

    Heat a little oil in a pan and sear the salmon skin-side down for 4 minutes. Flip and cook 2 more minutes.

    Snap the woody ends off the asparagus and roast with olive oil at 200°C for 8 minutes.

    Microwave or pan-steam the cauliflower rice for 3 minutes.

  5. 5

    Plate the cauliflower rice, top with the salmon, add the asparagus and finish with butter and lemon.
