Ingredients
For 1 serving.
- 150 g chicken breast
- 60 g quinoa (dry)
- Cucumber, cherry tomatoes
- Olive oil, lemon
Instructions

Cook the quinoa in 120 ml of water for 12 minutes until the water is absorbed. Fluff with a fork.

Season the chicken breast with salt and pepper. Grill or pan-fry 4 minutes per side until cooked through.

Rest the chicken for 2 minutes, then slice.

Toss the quinoa with diced cucumber, cherry tomatoes, olive oil and lemon juice.

Top with the sliced chicken and a pinch of sea salt.
