Spiced lentil & tomato soup

Ingredients

For 2 servings.

  • 100 g red lentils (dry)
  • 1 can chopped tomatoes
  • Cumin, garlic, onion
  • 1 slice brown bread

Instructions

    Sauté a diced onion and 2 garlic cloves in olive oil until soft, about 3 minutes.

    Stir in 1 tsp ground cumin and cook 30 seconds.

    Add the lentils and tinned tomatoes with 500 ml water. Bring to a boil.

    Reduce heat and simmer 20 minutes until the lentils are soft.

  5. 5

    Blend half the soup for a creamy texture, stir back in, and season. Serve with brown bread.
