Falafel & tabbouleh bowl

Baked falafel over bulgur tabbouleh with cucumber and tahini.

Ingredients

For 1 serving.

  • 4 baked falafel
  • 80 g bulgur (dry)
  • Parsley, tomato, cucumber
  • Tahini, lemon

Instructions

    Cook the bulgur in 160 ml boiling water, covered, for 10 minutes; fluff.

    Warm the falafel per package instructions (oven 12 minutes at 200°C, or pan-fry).

    Chop parsley, tomato and cucumber finely; toss with the bulgur, olive oil and lemon.

  4. 4

    Build the bowl: tabbouleh base, falafel on top.

  5. 5

    Drizzle with tahini thinned with 1 tbsp water.
