Chickpea & halloumi salad

Pan-fried halloumi over chickpeas, roasted peppers and rocket with lemon.

Ingredients

For 1 serving.

  • 100 g halloumi
  • 150 g chickpeas
  • Roasted peppers
  • Rocket, olive oil, lemon

Instructions

    Drain and rinse the chickpeas; pat dry.

    Slice the halloumi into 8 mm slabs. Pan-fry 1–2 minutes per side until golden.

    Toss the chickpeas, roasted peppers and rocket with olive oil and lemon juice.

    Top the salad with the warm halloumi.

  5. 5

    Finish with cracked black pepper and extra lemon on the side.
