Beef & broccoli stir-fry

Lean beef strips stir-fried with broccoli and ginger over jasmine rice.

Ingredients

For 1 serving.

  • 140 g lean beef
  • 150 g broccoli
  • 70 g jasmine rice (dry)
  • Ginger, soy sauce

Instructions

    Cook the jasmine rice in plenty of salted water for 12 minutes; drain.

    Slice the beef thinly against the grain. Marinate with 1 tbsp soy and grated ginger for 5 minutes.

    Heat a wok or large pan until smoking. Add the beef and stir-fry for 90 seconds, then remove.

    Stir-fry the broccoli florets with a splash of water for 2 minutes.

  5. 5

    Return the beef, toss with another splash of soy, and serve over the rice.
